Third 14 Days of Stay at Home (Day 36)

22nd April 2020, Wednesday

I think today it is the earliest day I woke up during this MCO period. Was kinda being disturb thinking about my cake having not enough ingredients hahaha. I went to the store early in the morning right after it is opened. There were only three customers in there including me. I quickly picked up two boxes of milk and toilet rolls then went home.

My assistant, which is my bro, assisting in filming the baking process woke up early too. So we started our project at 8.00 am, continue baking my bake from yesterday. I quickly made my second batch of cream cheese and whipping cream. Recipe here: Making cream cheese & making whipping cream

Ingredients:

  • 100 g Oreo cookies (without cream) or 1 packet of Oreo
  • 40 g melted butter
  • 250 g dark chocolate (to be split into two)
  • 500 g cream cheese (to be split into two)
  • 375 g whipping cream (to be split into three)
  • 1 tbsp sweetened condensed milk
  • 1 tsp vanilla essence
  • 66 g castor sugar

1st Layer: Oreo Crust
1. Crush 100g of Oreo cookies (without cream).
2. Add 40g melted butter into crushed Oreo cookies. Mix well and pour onto 9-inch square pan to align base.
3. Set aside and refrigerate for 30 minutes.

*I'm using Munchy's cookies and circle pan.

2nd Layer: Chocolate Layer
1. Melt 125g dark chocolate in a double boiler and set aside to cool down for a bit.
2. Whisk 250g cream cheese for about 2 minutes. Then, add in 33g castor sugar, 1 tbsp sweetened condensed milk, 1 tsp vanilla essence and mix well.
3. Add in melted dark chocolate and mix using a spatula until consistency is smooth.
4. In a separate bowl, whisk 125g whippimg cream until there are stiff peaks. Then, add to dark chocolate and cream cheese mixture and mix well.
5. Pour mixture onto Oreo base to form second layer, set aside and refrigerate for 30 minutes.

*I'm using Milo powder because I can't get dark chocolate here.

3rd Layer: Cream Cheese Layer
1. In another mixing bowl, combine 250g cream cheese, 33g castor sugar, 1tsp vanilla essence (optional), and mix well for 3 minutes.
2. Then, add 125g whipping cream and mix well again.
3. Pour mixture onto second layer to form third layer, set aside and refrigerate for 30 minutes.

4th Layer: Chocolate Ganache
1. Combine 125g dark chocolate and 125g whipping cream in a double boiler. Then, add 1 tbsp of butter.
2. Stir slowly and melt chocolate over low heat.
3. Once mixture is thick, creamy and shiny, remove from heat and let cool for less than 10 minutes. Then, quickly pour onto third layer to form top layer. Finally, set aside and refrigerate overnight.

Chocolate Ganache


The baking process seemed kinda smooth at first but I totally made a mistake for the whipping cream measurement from the start, leaving me having not enough of it for the last layer. First and second layer of the cake was fine but the third layer was a total fail. I actually followed another recipe for the chocolate ganache layer which do not use whipping cream. Hmmm, it's okay, we'll try again. So this is my Chocolate Indulgence Cheesecake with Oreo Crust, definitely not the best appearance with the chocolate ganache melting down hahaha. But the taste was actually quite good and I'm really surprised by the homemade cream cheese which tasted really good!
