Mango Chili Relish Recipe (Sambal Manga)

21st May 2020, Thursday

It's the season of MANGO! Thanks to tai q (uncle) and tai yi (aunty) for all types of mangoes, I dont know the names, I only know there are big and small ones.

There's this type of mangoes which are smaller and not ripe ones we called it manga muda (young mango), we'll be using to make Mango Chili Relish or Sambal Manga.

Step 1: Peel of the mango skin, cut it into half and remove the seed. After that grate the mango into fine pieces. (Buka kulit mangga, potong mangga kepada separuh dan buangkan bijinya. Kemudian parut mangga menjadi halus)

Step 2: Prepare all the ingredients needed: garlic, red onion, grated mango, chili paste, some sugar, and salt. (Sediakan semua bahan yang diperlukan: bawang putih, bawang merah, manga yang sudah diparut, lada, gula dan garam)

Step 3: Crush the garlic using a pestle and mortar. (Gunakan lesung batu untuk tumbuk bawang putih.)

Step 4: Add in the red onion and crush and mix them well. (Masukkan bawang merah dan tumbuk bersama.)

Step 5: Add in some salt according to your taste like. (Tambahkan garam mengikut rasa sendiri.)

Step 6: Add chili paste and mix well. (Tambahkan lada dan lumatkan)

Step 7: If you have some larger pieces of mangoes that cannot be grated, crush them and add some sugar. (Jika ada mangga yang tidak dapat diparut, tumbukkan dalam lesung batu dan tambahkan sedikit gula)

Step 8: Then mix in together the grated mangoes and add sugar according to your taste like.

Step 9: Put everything in a bowl and mix them well. You may add in more chili, salt and sugar according to your own preference. (Masukkan semua ke dalam mangkuk dan gaul hingga sebati. Anda boleh menambah lada, garam dan gula mengikut rasa masing-masing)

Step 10: Mango Chili Relish is ready to served! (Sambal Manga siap untuk dihidang)

Try it for yourself!

Phase 5 - Entering the New Norm (Day 1)

13th May 2020, Wednesday

Let's enter the new normal starting today, so it will be day one. I guess today a little miracle happened and gave me a little motivation to kick start again. I've been thinking this for quite sometimes. Thank God, finally I managed to do it. Few more to be done by tomorrow, at least it was a good start.

I cooked instant miso noodles for breakfast. Mum told me there was some pork meat left, so I mixed it with an egg and fried it like an omelette. It was the perfect combination! Bro said it was some kinda of Korean inspired food ^^

And I'm still on my decluttering journey. Too much to filter out which one to keep or not to keep. But mostly are in the recycle bin, hooray!

Tonight's evening service was led by Pr. James Yapp with sermon titled Penderitaan-penderitaan Umat Kristian (The Sufferings of Christians).

Phase 4 - Stay at Home (Day 56)

12th May 2020, Tuesday

Today marks the end of MCO and now we're on CMCO with SOP to anywhere that we go. Nowadays my routine has been a bit different, most of the time being on the laptop, either doing work or decluttering it. There's still so much junk even though this was one of my plan to achieve when the MCO started. Looks like I failed it, but I still continue doing it. Hmm, really not much. I hope everything will be fine soon and back to normal. I guess busy gets me more motivated and less anxiety.

I'm not lost for I know where I am. But however, where I am may be ...

Phase 4 - Stay at Home (Day 55)

11th May 2020, Monday

It's Monday again. Actually we're on Condition Movement Control Order (CMCO) since the 4th of May but Sabah Government is not implementing it so we're still on MCO until the 12th May. But on the 7th of May Sabah Government announced that will be allowing few sectors to open with certain Standard Operating Procedures (SOP) to follow. So yeah, I'm still staying home as my job which involves children and school are not allowed to open yet and I'm still teaching from home.

Mum cooked watan ho for breakfast which filled with so much ingredients; fish cake, egg roll,  pork meat, mushroom, eggs, and carrots.

After that, I went to my laptop sorting out some work then rest a bit before I had class with my student at 3.00 pm.

That's all for today!

Phase 4 - Stay at Home (Day 54)

10th May 2020, Sunday

Happy Mother's Day! I was supposed to have class today but the student's mum requested to postponed it to tomorrow. So I had the whole day for baking and cooking! I baked Chocolate Chips Cupcake for mother's day. The recipe that I found on Youtube was simple, no fuss and yummy.

some cupcakes for a church sister staying nearby

We didn't buy anything for mum actually. She hand crafted the flower bouquet by herself ><. She did it for fun, as she always said no need to waste money on flowers as flower bouquet are quite expensive on special occasion. Yeah, just cupcakes for my mum!

For dinner I made wedges. It was quite easy too and it's my first time making it. I followed a recipe from Youtube and improvised a bit.

First, clean and but the potatoes into wedges bite size. Soaked in water.

Second, boiled the potatoes adding 1 tablespoon salt into it. Boil it for around 5 minutes until it is 50% cooked and soften. Then strain the water and let it cool aside.

Third, prepare the coating for the wedges. 1/2 cup of flour, 1/2 cup of corn starch, 1 teaspoon of salt and curry powder (to own liking). Add water and make it into paste but not too watery.

Forth, pour it into the potatoes coating all of it.

Fifth, fry it until turns golden brown and it's ready to be served!
